What refusing the other coins does

It removes the option to pay with something that leaves a public trail. Bitcoin and Litecoin both record sender, receiver and amount on a chain anybody can read forever, and a market that accepts them has buyers doing that whether they thought about it or not. Monero does not publish those three things.
